    NƯỚC CHẤM

    The Mother Sauce

    The dipping sauce every Vietnamese table orbits.

    The move — dissolve sugar in warm water first; add garlic and chili last so they float.

    Ingredients

    • 3 tbsp Son fish sauce
    • 3 tbsp lime juice (about 2 limes)
    • 3 tbsp sugar
    • 6 tbsp warm water
    • 2 cloves garlic, minced
    • 1 bird’s-eye chili, thinly sliced

    The method

    1. Dissolve the sugar in the warm water — completely, no shortcuts.
    2. Stir in the fish sauce and lime juice. Taste: bright, then salty, then sweet.
    3. Add the garlic and chili last so they float.
    4. Serve in a shallow bowl. It keeps a week in the fridge — it won’t last that long.

    Caramel Pork & Eggs

    Pork belly and boiled eggs braised in caramel, coconut water and fish sauce — the Tết classic.

    The move — take the caramel one shade darker than comfortable; the fish sauce keeps it savory, not candy.

    Ingredients

    • 1½ lb pork belly, cut in two-inch pieces
    • 6 eggs, boiled and peeled
    • 3 tbsp sugar, for the caramel
    • ¼ cup Son fish sauce
    • 2 cups coconut water
    • 3 shallots, sliced · fresh black pepper

    The method

    1. Melt the sugar in a dry pot until it is one shade darker than comfortable.
    2. Add the pork and shallots; turn until every edge is lacquered.
    3. Pour in the fish sauce and coconut water; simmer, lid ajar, 75 minutes.
    4. Slide in the eggs for the last twenty. Serve over rice; spoon the sauce generously.

    GÀ KHO GỪNG

    Ginger Caramel Chicken

    One pan, one glaze: fish sauce, brown sugar, a thumb of ginger.

    The move — marinate the chicken in fish sauce 15 minutes before it sees the pan.

    Ingredients

    • 1½ lb chicken thighs, cut in pieces
    • 3 tbsp Son fish sauce
    • 2 tbsp brown sugar
    • A thumb of ginger, in matchsticks
    • 2 cloves garlic, sliced
    • Scallions, to finish

    The method

    1. Marinate the chicken in the fish sauce for fifteen minutes before it sees the pan.
    2. Melt the brown sugar in the pan; add ginger and garlic until fragrant.
    3. Add the chicken and toss to glaze, then lid on, low heat, fifteen minutes.
    4. Finish uncovered until glossy. Scallions over the top, rice underneath.

    Grilled Pork, Warm Bath

    Ingredients

    • 1 lb ground pork (half belly, half shoulder)
    • 2 tbsp Son fish sauce, for the marinade
    • 2 shallots + 2 cloves garlic, minced
    • 1 tbsp sugar · fresh black pepper
    • Rice vermicelli · mint, perilla, lettuce
    • A full batch of warm nước chấm

    The method

    1. Season the pork with fish sauce, shallot, garlic and sugar; shape small patties and rest 30 minutes.
    2. Grill — or broil — until the edges char.
    3. Warm the nước chấm. It is the bath, not a dip.
    4. Drop the patties into the warm bowl; eat with vermicelli and herbs, dipping as you go.

    GÀ NƯỚNG SẢ

    Lemongrass Grilled Chicken

    Blend lemongrass, garlic, shallot, fish sauce, sugar; marinate thighs at least 4 hours.

    The move — fish sauce seasons from the inside — soy only paints the surface.

    Ingredients

    • 2 lb chicken thighs, bone-in
    • 3 stalks lemongrass, tender parts only
    • 3 tbsp Son fish sauce
    • 2 tbsp sugar
    • 3 cloves garlic + 1 shallot
    • 2 tbsp neutral oil

    The method

    1. Blend lemongrass, garlic, shallot, fish sauce, sugar and oil into a rough paste.
    2. Massage into the thighs; marinate at least four hours — overnight is better.
    3. Grill over medium coals, or roast hot, until charred and cooked through.
    4. Rest five minutes. Serve with rice, herbs and anything pickled.

    Tuesday Fried Rice

    Day-old rice, whatever’s in the fridge, and a splash of fish sauce instead of soy.

    The move — add it at the rim of the wok so it sizzles before it touches the rice.

    Ingredients

    • 3 cups day-old rice
    • 2 eggs
    • Whatever’s in the fridge
    • 1½ tbsp Son fish sauce
    • Scallions · fresh black pepper
    • 2 tbsp oil

    The method

    1. Get the wok properly hot before anything touches it.
    2. Eggs first, then rice, breaking the clumps against the wok.
    3. Add the fish sauce at the rim of the wok so it sizzles before it touches the rice.
    4. Scallions, black pepper, off the heat, straight to the bowl.

    Fish sauce, lime, honey, water, garlic, chili — pour over roasted brussels sprouts or any bitter green.

    The move — make double; it keeps a week.

    Ingredients

    • 2 tbsp Son fish sauce
    • 3 tbsp lime juice
    • 2 tbsp honey
    • 2 tbsp water
    • 1 clove garlic, grated
    • 1 chili, minced

    The method

    1. Whisk the honey into the lime juice and water until it disappears.
    2. Add the fish sauce, garlic and chili.
    3. Taste on a leaf, not a spoon — dressings live on the salad.
    4. Pour over roasted brussels sprouts or any bitter green. Make double; it keeps a week.

    One tablespoon into any bolognese, marinara or chili. Rome seasoned with garum two thousand years ago; you’re in good company.

    The move — add early and no one will name it — they’ll just ask why yours is better.

    Ingredients

    • Your usual bolognese, marinara or chili
    • 1 tbsp Son fish sauce

    The method

    1. Build the sauce the way you always do.
    2. Add one tablespoon of fish sauce early, with the tomatoes.
    3. Simmer as usual — the fish sauce disappears into depth.
    4. Tell no one. They’ll just ask why yours is better.

    SCALLION BUTTER NOODLES

    Butter, slow-caramelized scallions, splashes of fish sauce, parmesan, noodles.

    The move — neither butter nor fish sauce should be identifiable. Depth is the whole trick.

    Ingredients

    • 4 tbsp butter
    • 2 bunches scallions, cut long
    • 2 tsp Son fish sauce, in splashes
    • Fresh noodles
    • Parmesan · fresh black pepper

    The method

    1. Melt the butter low and slow; add the scallions and let them caramelize — fifteen unhurried minutes.
    2. Splash in the fish sauce off the boil, a little at a time.
    3. Toss with hot noodles and a ladle of noodle water until silky.
    4. Parmesan and pepper. Neither butter nor fish sauce should be identifiable.
